We recently made this delicious and super quick and easy Pea Pesto for a weeknight dinner. Usually L does the after-work cooking as he gets home before me but this time I got to make dinner.
We still had some fresh pasta in the fridge that we quickly boiled, added a few spoons of this bright green pesto on top and voilà, dinner was ready!
The best thing about this pesto is, you only need a few ingredients and they're so basic that many of you will have them in the pantry and freezer anyway.
Quick Pea Pesto
1 cup frozen peas, thawed
handful of mint
juice of half a lemon
100g grated parmesan
1.5 tbsp of olive oil
salt & pepper
Put all ingredients in a food processor and pulse together.
Serve on pasta, drizzle with a little bit of oil and a squeeze of lemon. A few turns of the pepper mill and you are ready to serve.
This one is definitely going on our list of quick and easy dinners, perfect for when you can't be bothered slaving away in the kitchen for an hour or so after work. What is your favourite recipe for a quick weeknight dinner?
